Moosewood White Bean And Tomato Salad - cooking recipe

Ingredients
    2 (15 ounce) cans cannellini beans or (15 ounce) cans kidney beans, drained
    2 garlic cloves, minced
    1/4 cup red onion, minced
    6 celery ribs, with leaves sliced (optional)
    1 lemon, juice of
    2 tablespoons olive oil
    1 1 tablespoon fresh basil or 1 teaspoon dried basil
    2 tomatoes, cubed or (15 ounce) cans diced tomatoes, drained
    1 tablespoon red wine vinegar (optional)
    salt and pepper, to taste
Preparation
    Combine all ingredients in a bowl. Serve at room temperature.
