Ghana Jollof Rice (With Chicken And Ham. Full Meal!) - cooking recipe

Ingredients
    2 cups water
    3 lbs chicken, cut into 8 pieces (bone in. I use drumsticks and thighs and remove the skin)
    2 (16 ounce) cans stewed tomatoes
    2 teaspoons salt
    1/4 teaspoon black pepper
    3/4 cup smoked ham, cooked and cubed
    1 cup rice, uncooked
    1 large onion, sliced
    3 cups green cabbage, shredded
    1/2 lb fresh green beans, quartered and stems removed
    1/4 teaspoon ground cinnamon
    1/4 teaspoon cayenne pepper
Preparation
    Pour the water into a large pot. Add the chicken, tomatoes, salt and pepper. Cover and bring to a boil. Reduce the heat and simmer for 30 minutes.
    Stir in the ham, rice, onion, cabbage, green beans, cinnamon and cayenne pepper.
    Bring to a boil, then reduce heat to low. Cover and simmer until the chicken is fork-tender and the rice is cooked - about 25 to 30 minutes. *You can choose to simmer it longer if you want to cook out more of the liquid. It's up to you. Enjoy!
