Winter Solstice Soup - cooking recipe

Ingredients
    2 tablespoons butter
    2 onions, chopped
    2 carrots, shredded
    2 potatoes, peeled and cubed
    2 cups milk
    3 cups water
    1 teaspoon salt
    1 tablespoon dried parsley
    1/2 teaspoon thyme
    1 bay leaf
Preparation
    Saute onions in the butter in a large soup pot. Add carrots, potatoes, water, salt, parsley, thyme and bay leaf.
    Reduce heat to low and simmer for 30 minutes. Discard the bay leaf.
    Puree soup in a blender in small batches or with a stick blender. Return to the pot.
    Stir in milk. Season with salt and pepper to taste.
