Exquisite Carrot & Zucchini Muffins - cooking recipe

Ingredients
    1 cup whole wheat flour
    3/4 cup white flour
    1 cup brown sugar
    1 1/2 teaspoons baking soda
    1 1/2 teaspoons cinnamon
    3/4 teaspoon salt
    1 egg
    2/3 cup milk
    1/2 cup oil
    2 teaspoons vanilla
    1 small zucchini, shredded
    1 medium carrot, shredded
    1 cup chopped nuts (optional)
Preparation
    Preheat oven to 350\u00b0F.
    Spray muffin pan with non-stick spray.
    In a large bowl, mix the flours, brown sugar, baking soda and salt.
    In a medium bowl, beat egg; stir in milk, oil and vanilla.
    Add egg mixture and remaining ingredients to flour mixture; stir until just moistened.
    Spoon evenly into muffin pan.
    Bake for 35 - 40 minutes until golden.
