Rice Paper Roll-Ups - cooking recipe

Ingredients
    20 large shrimp, cooked (or crab or smoked salmon)
    20 rice paper sheets, softened
    1 mango, cut into fine strips
    1 carrot, cut into thin strips and blanched for 30 seconds
    1 red pepper, cut into thin strips
    1 cup bean sprouts
    20 large cilantro leaves
    20 mint leaves
    20 pieces boston head lettuce
    20 chives
    1/4 cup rice vinegar
    2 tablespoons fish sauce
    2 tablespoons lime juice
    2 tablespoons sugar
    1/2 teaspoon chili-garlic sauce
Preparation
    Mix last 5 ingredients to make sauce and let sit.
    Assemble wrappers starting at bottom third of wrapper in order.
    1 shrimp, strip mango, strip carrot, strip red pepper, bean sprouts, cilantro leaf, mint leaf, lettuce in the middle (can be inside or outside).
    Roll up and tie with a chive.
    Serve with dipping sauce.
