Refried Lentils - cooking recipe

Ingredients
    1 tablespoon olive oil
    1/2 cup dried red lentils
    2 tablespoons dried onion flakes
    1 -2 tablespoon minced garlic clove
    1 teaspoon dried ancho chile powder
    1/4 teaspoon dried chipotle powder
    1/2 teaspoon cumin
    1/2 teaspoon oregano
    1/4 teaspoon coriander
    1/8 teaspoon turmeric
    1/8 teaspoon cinnamon
    1 cup boiling water
    1/2 cup fat-free cheddar cheese (shredded)
Preparation
    Throw together olive oil, lentils, onion, garlic and spices in a slow cooker or cooking pot.
    Add boiling water, cover and cook until lentils are soft (20-30 minutes on stove, 30 minutes to an hour in slow cooker).
    Optional: Use a hand blender or masher to mash lentils.
    Stir in cheese until melted.
    Serve!
