Cornbread Coffee Cake - cooking recipe

Ingredients
    1 cup sifted all-purpose flour
    2 tablespoons sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 cup cornmeal
    1 egg
    1 cup milk
    3 tablespoons cooking oil
    1/2 cup strawberry preserves (or favorite)
    1 tablespoon sugar
Preparation
    Heat oven to 425\u00b0.
    Grease a 9\" pie dish.
    In mixing bowl, sift together flour, the 2 tablespoons sugar, the baking powder, and the salt.
    Stir in the cornmeal.
    In a separate bowl,blend egg, milk, and oil.
    Add to dry ingredients.
    Beat just until smooth.
    Spread the batter in the prepared pie dish.
    Spoon preserves over batter.
    Sprinkle with the remaining sugar.
    Bake for 20 to 25 minutes.
