Roasted Carnitas - cooking recipe
Ingredients

3 lbs pork shoulder roast
3 tablespoons tomato paste
4 cloves garlic
1 tablespoon oregano
1 1/2 teaspoons cumin
1/2 teaspoon pepper
2 1/2 teaspoons salt
1 bay leaf
1/2 cup onion (chopped)
6 cups chicken stock
Preparation

Place all the ingredients in a pot, simmer covered for 3 hours. Remove the meat from the stock and break apart into smaller chunks leaving fat attached. Add salt to taste and bake on 450 degrees for an additional 20 minutes to crisp the meat.
