Liz'S Morning Glory Muffins - cooking recipe

Ingredients
    2 cups flour
    1 cup sugar
    2 teaspoons baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon salt
    2 cups grated carrots, packed
    1/2 cup raisins
    1/2 cup grated coconut
    1/2 cup chopped pecans
    1 (8 ounce) can pineapple, drained
    1 cup applesauce
    3 large eggs, lightly beaten
    2 teaspoons vanilla extract
Preparation
    Combine first 5 ingredients in a mixing bowl, in a seperate bowl, stir together remaining ingredients; add to flour mixture, stirring until just moistened.
    Place paper baking cuts in muffin pans. Spoon batter into cups filling 2/3 full.
    Bake at 350 for 25 minutes or until golden brown. Remove from pans immediately.
