Diva Diabetic'S Black Bean Salad With Chili Lime Dressing - cooking recipe

Ingredients
    2 (15 ounce) cans black beans, very well drained
    1 small red onion, finely diced
    1 tomatoes, finely diced
    1 small red pepper, finely diced
    1 garlic clove, finely diced
    2 teaspoons cilantro, finely diced
    1 teaspoon red wine vinegar
    1/2 teaspoon cumin
    1/2 teaspoon chili powder
    2 limes
    3 tablespoons olive oil
    1 tablespoon cilantro, chopped
    salt, pepper to taste
Preparation
    In a jar with a tight lid, shake together the vinegar, oil, the juice of both limes- freshly squeezed, salt and pepper to taste. Add the rest of the ingredients in a large bowl, and drizzle with the dressing. Mix well, adding salt/pepper to taste if desired. Garnish with fresh cilantro and enjoy!
