Braised Lemongrass Chicken - cooking recipe

Ingredients
    2 tablespoons vegetable oil
    4 shallots, minced
    3 garlic cloves, minced
    1 lb chicken thigh, cut in 1 inch pieces
    4 stalks lemongrass, white part only cut into 1 inch pieces
    1 teaspoon thai red chili pepper, minced (optional)
    1/4 cup chicken stock
    2 tablespoons fish sauce
    2 tablespoons lime juice
    1 tablespoon brown sugar
    1 red bell pepper, seeded and cut in 1 inch pieces
    2 green onions, chopped
    2 tablespoons roasted peanuts, chopped
Preparation
    Heat oil in a wok or large skillet over medium-high heat.
    Add shallots and garlic, cook for 1 minute, or until they start to color.
    Add chicken and stir fry until light golden, about 4 minutes.
    Add lemongrass, chile (if using), stock, fish sauce, lie juice, and sugar. Bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes. Add red pepper and cook for 5 minutes, or until chicken is cooked through.
    To serve, sprinkle with green onions and peanuts.
