Potato And Shrimp Curry - cooking recipe

Ingredients
    20 ounces Simply Potatoes Diced Potatoes with Onion
    1 tablespoon olive oil
    1/2 cup diced onion
    2 teaspoons minced garlic cloves
    1 teaspoon minced ginger
    1 lb medium raw shrimp
    1 teaspoon turmeric powder
    1/2 teaspoon cumin
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/2 teaspoon chipotle chili sauce
    1/2 cup chopped tomato
    1/2 cup Greek yogurt
    1/2 cup chicken broth
    1 cup whole milk
    2 tablespoons fresh cilantro
Preparation
    Heat oil in a wok over medium high heat. Saute onion, garlic and ginger until fragrant about 1 minute. Add potato, shrimp, carrot, turmeric, cumin, salt, pepper, and stir fry until shrimps turn pink. Add chipotle sauce, tomato, yogurt, chicken broth and milk. Stir, cover, lower the heat to medium, let cook 12-15 minutes or until potato are tender and the sauce is slightly thickened.
    Remove from heat, garnish with cilantro, and serve hot with steam rice or flat bread if desired.
