Healthy Asian Coleslaw - cooking recipe

Ingredients
    Dressing
    4 carrots, cut up into chunks
    1/4 cup water
    1/4 cup rice vinegar
    1 tablespoon apple cider vinegar
    1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
    1 tablespoon toasted sesame oil
    3 tablespoons ginger, chopped
    1/2 shallot, chopped
    Salad
    1 (8 ounce) bag Coleslaw
    1 sweet red pepper, chopped
    4 scallions, chopped
Preparation
    For the dressing combine all the ingredients in a blender and blend until smooth.
    Mix all the ingredients in a large bowl and serve or make ahead of time and keep it in the fridge.
