Gaucamole - cooking recipe

Ingredients
    3 ripe haas avocados
    1 lemon, juice of
    3/4 teaspoon kosher salt
    1/2 teaspoon cumin
    1/2 teaspoon jalapeno powder
    1 1/2 hothouse tomatoes, peeled, seeded, chopped
    3 -4 scallions, chopped
    chopped cilantro, to taste
    1 shallot, chopped
Preparation
    Put the avacados into a bowl with the lemon juice (strained), and the seasonings. Mash to a rather fine consistency with a few chunks remaining.
    Stir in the tomatoes and remaining ingredients. Sit 30 minutes before serving.
