Carrot-Banana Oat Bread - cooking recipe

Ingredients
    1 1/4 cups quick oats
    1 cup flour
    2/3 cup sugar
    1 1/2 teaspoons baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon ginger
    1 large egg
    1 cup over-ripe banana
    1 cup shredded carrot
    1/3 cup butter, melted
    2 tablespoons peanut butter
    1 teaspoon vanilla
    1 tablespoon lemon juice
    1/2 cup nuts (optional)
Preparation
    Combine dry ingredients (and nuts if desired, I like sunflower seeds)in a large bowl.
    Mix together until smooth: beaten egg, banana, carrot, melted butter, peanut butter, vanilla, and lemon juice.
    Add this to the dry ingredients and stir just until moistened.
    Pour into a greased 8x8-inch square pan.
    Bake at 375\u00b0F for 45 minutes to 1 hour or until done.
    NOTE: Depending on the oven you may want to try 350\u00b0F.
