Ingredients

1 cup Crisco shortening
1/4 cup butter, softened
1 cup sugar
1 cup brown sugar
2 teaspoons vanilla
2 eggs
2 1/4 cups flour
1/3 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 cup rolled oats (quick oatmeal)
1 cup flaked coconut
Preparation

Preheat oven to 350 degrees Fahrenheit.
In a large mixing bowl, cream Crisco shortening, butter, both sugars, vanilla, and eggs. Mix well.
Stir in flour, baking soda, baking powder, and salt. Mix well.
Stir in oats and coconut.
Drop by teaspoonfuls on a parchment lined cookie sheet.
Bake about 9 to 10 minutes.
Remove cookies from baking sheet.
Cool on wire racks.
