Microwave Apple Coffee Cake - cooking recipe

1/3 cup brown sugar, packed
1/2 cup walnuts, chopped and divided
2 cups baking mix
1/2 teaspoon ground cinnamon
1/3 cup milk
1 cup chunky applesauce
Preparation

Spray an 8 inch microwave safe dish with a non stick cooking spray.
Mix the brown sugar and 1/4 C of walnuts together in a small mixing bowl and set aside.
In a separate bowl mix together the baking mix, remaining walnuts and the cinnamon.
Pour the milk into the mixture.
Add the applesauce and beat with an electric mixer on low speed for 30 seconds.
Spread the batter into the prepared pan.
Sprinkle the top with the brown sugar mixture.
Microwave on high for 8 minutes or until the cake springs back when lightly touched.
