Zucchini Moons - cooking recipe

Ingredients
    4 cups zucchini, sliced
    1 tablespoon olive oil
    1 tablespoon fresh oregano, chopped
    1/2 cup parmesan cheese, freshly grated
    salt, to taste
    fresh ground black pepper, to taste
Preparation
    In a large skillet, heat the olive oil over medium heat. Add the zucchini and saute until soft, but still holding their shape. Stir in the fresh oregano and season with salt and pepper to taste. Remove from heat.
    Place in a shallow serving bowl or platter. Spread the parmesan cheese over the zucchini and serve.
