Green Chili & Scallion Cheese Ravioli - cooking recipe

Ingredients
    Won Ton Raviolis
    1/3 cup scallion, minced
    2 garlic cloves, minced
    1/3 cup tomatillo, minced
    1/2 cup green chili, roasted, seeded, peeled, and minced
    1 cup Cotija cheese, fresh grated
    1/2 cup ricotta cheese
    1 egg
    1 teaspoon salt
    1/2 teaspoon black pepper
    1/4 teaspoon cumin
    24 wonton wrappers
    Cream Sauce
    1/3 cup white onion, diced
    1 garlic clove, minced
    1 tablespoon butter
    1 tablespoon olive oil
    1/4 teaspoon cumin
    1/4 cup chicken stock
    1 cup cream
    salt
    pepper
    2 tablespoons cilantro, chopped
    2 tablespoons walnuts, chopped
Preparation
    Raviolis:
    Mix together first 10 ingredients in a large bowl and use as filling for your Raviolis (made from the won ton wrappers).
    Cook in a pot of salted boiling water for 2-3 minutes.
    Sauce:
    Melt butter and olive oil in a saute pan over medium heat. Add onion and cook until soft, about 3-4 minutes. Add garlic, cook for 1 more minute.
    Add cumin, chicken stock, cream, salt, & pepper. Increase heat to high, bring to a boil and reduce to a simmer, cook for an additional 3-4 minutes stirring often. Remove from heat.
    Serve Raviolis with the cream sauce topped with the walnuts and cilantro.
