Crockpot Irish White Bean And Cabbage Soup - cooking recipe

1 large onion, chopped
3 celery ribs, chopped
3 garlic cloves, minced
1/2 head cabbage, chopped
4 carrots, sliced
1 lb potato, diced
1/3 cup pearl barley
1 bay leaf
1 teaspoon thyme
1/2 teaspoon caraway seed
1/2 teaspoon rosemary
1/2 teaspoon black pepper
6 -8 cups vegetable broth
28 ounces great northern beans
14 ounces diced tomatoes
1 tablespoon chopped parsley
salt, to taste
Preparation

Place the vegetables, seasonings, and barley into the crockpot. Do not add the beans, tomatoes, or parsley.
Add enough vegetable broth to just cover the vegetables (start with 6 cups and add more as needed). Cover and cook on low heat for 7 hours.
Add beans, tomatoes, parsley, and salt to taste. Check seasonings and add more herbs if necessary. Cover and cook for another hour.
