Shrimp Scampi - cooking recipe

Ingredients
    2 tablespoons butter
    6 garlic cloves
    1 carrot
    1 red pepper (bell)
    1 red pepper (hot)
    2 cups spinach
    1 cup white wine
    18 jumbo shrimp
    1 teaspoon curry
    1 teaspoon salt (lemon-pepper)
    4 ounces whole wheat linguine
Preparation
    Slice garlic very thin, saute in butter until soft. Shred carrot, chop peppers and spinach and add to pan. Add wine and seasonings and simmer 7 minutes stirring occasionally. Add shrimp (tails removed) and heat through if cooked or until pink if uncooked. Serve hot over linguine. Enjoy!
