Tofu-Based Sauces - cooking recipe

Ingredients
    1 (10 1/2 ounce) box silken tofu
    For mayonnaise
    1 garlic clove, minced
    2 -3 teaspoons cider vinegar
    1/2 teaspoon salt
    For Aioli
    2 -3 garlic cloves, minced
    1/2 teaspoon salt
    1/2 teaspoon dry mustard
    1/2 teaspoon cider vinegar
    1/4 cup freshly minced chives (optional) or 1/4 cup freshly minced parsley (optional)
    Greek Lemon sauce
    1 tablespoon fresh lemon juice
    1/2 teaspoon salt
    3 -5 dashes white pepper
    Horseradish sauce
    2 teaspoons fresh lemon juice
    1/2 teaspoon salt
    2 teaspoons prepared horseradish
    white pepper, to taste
    minced chives (optional)
Preparation
    Place all ingredients in a blender, and whip until smooth.
    Store in a tightly covered container in the fridge.
