Brennan'S Absinthe Suissesse - cooking recipe

Ingredients
    For the simple syrup
    1/4 cup sugar
    1 cup boiling water
    For the drink
    1/2 cup Herbsaint (Absinthe, Ricard or Pernod may be substituted)
    1 large egg white
    1/4 cup half-and-half
    1/4 cup simple syrup
    1 cup crushed ice
Preparation
    To make the simple syrup: mix the sugar and water together until sugar is completely dissolved.
    Put all the drink ingredients in a blender and whirl at high speed for 30 seconds.
    Serve in chilled old fashioned or wine glasses.
