Winter Melon Soup - cooking recipe

Ingredients
    1 lb winter melon (white gourd)
    1/3 cup ham
    1 (14 ounce) can chicken broth
    3 1/2 cups water
    1 inch fresh ginger
    1 green onion
    1 teaspoon sherry wine
    2 teaspoons salt
    2 dried Chinese mushrooms, diced (soak mushrooms in boiling water to cover for 20 minutes, squeeze dry and cut off stems)
Preparation
    Remove melon skin and seeds, cut into 1\" squares. Slice ham into thin slices. Cook broth, 3 1/2 cups water, ginger, green onion, sherry,mushrooms, and melon for 1 hour. Add ham for 10 minutes. Remove onion and ginger before serving. Serve hot.
