Spinach And Cheese Crustless Quiche (Skf) - cooking recipe
Ingredients

10 ounces Baby Spinach (Fresh)
3 garlic cloves (Crushed)
2 teaspoons olive oil
1 cup roasted red pepper (drained and press out any liquid)
8 ounces cottage cheese (2%)
1/3 cup parmesan cheese, grated
2/3 cup mozzarella cheese, shredded (2%)
1 teaspoon italian seasoning
1 teaspoon basil (dry)
1 dash cayenne pepper (Ground)
6 eggs (beaten)
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

Preparation

Spray a saute pan with Olive Oil Spray and add the 2 teaspoons of Olive Oil. Heat pan, add baby spinach and saute for about 5 - 10 minutes. Add garlic and continue to saute.
Strain spinach and garlic when done. Set aside to cool.
Grate the mozzarella cheese.
Prepare a 9\" pie plate by spraying with Olive Oil.
Preheat Oven to 350 degrees.
Beat the 4 eggs in a large bowl, then mix in the remaining ingredients.
Pour into prepared pie plate.
Bake for 40 minutes or until center is set.
Garnish with Fresh Basil.
