Gluten Free Zucchini Bread - cooking recipe

1/4 cup canola oil
2/3 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup applesauce
1 3/4 cups gluten-free flour (4 flour blend)
2 teaspoons baking powder
1 teaspoon xanthan gum
1/2 teaspoon salt
1 1/2 g cinnamon
1 1/2 cups grated zucchini
1/2 cup chopped pecans (optional)
1/2 cup raisins (optional)
Preparation

Preheat oven to 350\u00b0F.
Grease 9x5 loaf pan.
Combine oil, sugar.
Add eggs, vanilla applesauce & beat.
Add flours, baking powder, xantham gum, salt, and cinnamon.
Stir in zucchini, nuts and raisins.
Bake for 1 hour.
