Mad Dog’S Serious Kick-Ass Barbecue Sauce - cooking recipe

Ingredients
    1 large vidalia onion, chopped
    2 tablespoons butter
    1 cup ketchup (I use Heinz 57)
    1/2 cup beef stock
    1/4 cup jim beam Bourbon
    1/4 cup blackstrap molasses
    1 chipotle chile in adobo (two if you want a real kick)
    3 tablespoons Worcestershire sauce
    1 teaspoon liquid smoke
    2 tablespoons red wine vinegar
    1/3 cup light brown sugar
    2 teaspoons mustard powder
    2 teaspoons fresh ground black pepper
Preparation
    Melt butter in frying pan and cook onions until soft and translucent.
    In a saucepan combine all ingredients, bring to a boil, reduce temperature and simmer for 30-45 minutes.
    Remove from heat and let cool to room temperature before using.
