Stephenson'S Restaurants Fresh Apple Fritters - cooking recipe

Ingredients
    1 cup milk
    1 egg (beaten)
    4 tablespoons margarine
    1/2 cup sugar
    1/2 teaspoon salt
    1 orange, juice and zest of
    1 cup apple (chopped fine)
    3 cups flour
    2 teaspoons baking powder
    1 teaspoon vanilla
    4 cups vegetable oil, to fry fritters enough they float in a pot
Preparation
    Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.
