Zucchini Relish - cooking recipe
Ingredients

Grind and let stand overnight
10 cups zucchini, rind and seeds, too
4 cups onions
1 red bell pepper
1 green bell pepper
5 tablespoons salt
Drain and rinse in cold water and add
2 1/2 cups cider vinegar
5 1/2 cups sugar
1 teaspoon nutmeg
1 teaspoon turmeric
1 teaspoon celery seed
1 teaspoon cornstarch
Preparation

Simmer 30 minutes.
Pour in sterilized, hot jars and seal.
Use enamel or earthenware utensils, not aluminum.
