Whole Grain Spaghetti With Tuna And Vegetables - cooking recipe
Ingredients

8 ounces whole wheat spaghetti
2 tablespoons extra virgin olive oil
1 small bell pepper, finely diced
1 small onion, finely diced
2 -3 garlic cloves, minced
1 cup mushroom, chopped
1 (14 1/2 ounce) can diced tomatoes (I use the petite diced tomatoes with mild green chilies)
1 (15 ounce) can black beans, drained and rinsed
1 (5 ounce) can tuna, drained
1/2 cup chicken broth
2 tablespoons lemon juice
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon cumin
1/2 teaspoon basil
1/2 teaspoon coriander
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese, grated
Preparation

Cook spaghetti according to package directions.
While pasta is cooking, in a separate skillet heat up the olive oil over medium heat. Add the onion and bell pepper and saute for approximately 5-10 minutes.
Add the garlic, mushrooms, tomatoes, beans, tuna, chicken broth, lemon juice, and spices and simmer over medium heat for about 10 minutes, stirring occasionally.
When pasta is finished, drain and add to the vegetable mixture.
Add Parmesan cheese, stir and serve.
