Giada'S Olive Oil Muffins - cooking recipe
Ingredients

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
4 egg whites
2 teaspoons lemon zest
2 teaspoons orange zest
2 tablespoons balsamic vinegar
2 tablespoons plain unsweetened soymilk
3/4 cup olive oil
2/3 cup sliced almonds, toasted
Preparation

Blend together the flour, baking powder, and salt in a medium bowl to sift together.
In a large mixing bowl, beat the sugar, egg, and zests until pale and fluffy.
Beat in the vinegar and milk.
Gradually beat in the olive oil.
Add the flour mixture and stir until just blended. Crush some almonds by hand and add them to the batter while mixing.
Fill the muffin tins up to nearly the top.
Top with remaining almonds.
Bake until golden on top, about 25 minutes.
