Zucchini Nut Bread By Sheila - cooking recipe

Ingredients
    3 eggs
    1 cup oil
    2 1/2 cups sugar
    2 -3 cups zucchini (peeled & grated)
    3 teaspoons vanilla
    3 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    3 teaspoons cinnamon
    1/2 cup chopped nuts
Preparation
    Beat eggs.
    Add oil, sugar, zucchini, and vanilla.
    Mix lightly but well.
    Add other ingredients.
    Beat well.
    Bake in greased loaf pans at 325 for 1 hour.
    Yields 2 loaves.
    Freezes well.
