Roasted Tomato Balsamic Vinaigrette - cooking recipe

Ingredients
    1 tablespoon double concentrated tomato paste
    1 tablespoon balsamic vinegar
    1 tablespoon rice vinegar
    1/2 teaspoon Dijon mustard
    6 tablespoons olive oil
    salt and ground black pepper to taste
Preparation
    Whisk tomato paste, balsamic vinegar, rice vinegar, and Dijon mustard together in a bowl until smooth.
    Slowly drizzle olive oil into tomato paste mixture while whisking rapidly until dressing is thick and creamy. Season with salt and black pepper.
