Southwest Watermelon Salad - cooking recipe

Ingredients
    1/4 cup canola oil
    1/4 cup cider vinegar
    salt and ground black pepper to taste
    1 seedless watermelon, cubed
    3 shallots, chopped
    1/3 cup chopped cilantro
    1 bunch arugula
    2 (8 ounce) packages shredded pepper Jack cheese
Preparation
    Pour canola oil in a thin stream into vinegar; whisk until blended. Season dressing with salt and pepper.
    Toss watermelon, shallots, cilantro, and dressing together in a large bowl. Arrange arugula on plates and spoon salad on; top with pepper Jack cheese.
