Improvised Detox Salad - cooking recipe

Ingredients
    1 green apple, shredded
    1 red apple, shredded
    1/2 yellow bell pepper, shredded
    1/2 cucumber, shredded
    1/2 small raw beet, shredded
    1 carrot, shredded
    1/2 small red onion, very thinly sliced
    1 broccoli stem, very thinly sliced
    1 rib celery, very thinly sliced
    2 sprigs fresh parsley, finely chopped
    1 tablespoon extra-virgin olive oil
    1 tablespoon lemon juice
    salt and ground black pepper to taste
    1 tablespoon toasted pine nuts, or to taste (optional)
Preparation
    Combine green apple, red apple, yellow bell pepper, cucumber, beet, and carrot in a large bowl. Stir in onion, broccoli stem, celery, and parsley. Add olive oil, lemon juice, salt, and pepper. Toss to mix well. Garnish with pine nuts.
