Chopped Cashew Salad - cooking recipe
Ingredients

1 pound seedless red grapes, halved
1/2 pint cherry tomatoes, halved
1 red bell pepper, diced
1 orange bell pepper, diced
1 yellow bell pepper, diced
1/2 cup edamame (green soybeans)
1/2 cup crumbled feta cheese with herbs
1 teaspoon dried basil
1/2 teaspoon lemon-pepper seasoning
salt to taste
1 avocado, diced
3/4 cup cashews
1 tablespoon extra-virgin olive oil, or to taste
1 tablespoon red wine vinegar, or to taste
Preparation

Mix grapes, tomatoes, red bell pepper, orange bell pepper, yellow bell pepper, edamame, and feta cheese with herbs in a bowl. Add basil, lemon pepper, and salt to vegetable-grape mixture; toss to coat. Add avocado and cashews to vegetable-grape mixture just before serving. Drizzle olive oil and vinegar over salad; toss to coat.
