Spicy Veggie And White Bean Quinoa - cooking recipe

Ingredients
    2 tablespoons olive oil
    1 cup matchstick-cut carrots
    3 stalks celery, chopped
    1 yellow bell pepper, chopped
    1 small red onion, chopped
    1 (10 ounce) can white beans, drained and rinsed
    1 (10 ounce) can diced tomatoes, with liquid
    1 cup vegetable broth
    1 cup quinoa
    4 ounces hot giardiniera
    1 teaspoon garlic powder
    salt and ground black pepper to taste
Preparation
    Heat oil in a deep pan over medium-high heat. Saute carrots, celery, bell pepper, and onion until crisp-tender, about 5 minutes. Add beans, tomatoes, broth, quinoa, giardiniera, garlic powder, salt, and pepper. Bring to a boil. Turn down to a simmer and cook until most of the liquid has been absorbed, about 20 minutes.
