Microwave Coated Fish(Low-Fat) - cooking recipe

Ingredients
    1 lb. fresh or frozen fish
    2 Tbsp. buttermilk
    1 Tbsp. margarine
    1/2 c. cornbread stuffing mix
    1/8 tsp. salt and pepper
Preparation
    Thaw fish.
    Turn under thin edges in a 12 x 7 x 2-inch baking dish (8 x 8 x 2-inch low wattage oven). Brush fish with buttermilk.
    In a small bowl, cook margarine 30 seconds or until melted. Stir in stuffing mix, salt and pepper. Spoon stuffing over fish.
    Cook fish, uncovered, 4 to 7 minutes (7 to 9 for Low) or until fish flakes easily.
    Give dish 1/2 turn after 3 minutes.
