Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onions
    5 Tbsp. salt
    3 ground green bell peppers
    1 1/2 ground red bell peppers
    2 1/2 c. cider vinegar
    5 c. sugar
    1 Tbsp. dry mustard
    1 Tbsp. celery seed
    1 Tbsp. mustard seed
    2 Tbsp. cornstarch
Preparation
    Let the first 3 ingredients soak overnight.
    Rinse well in cold water and drain well.
    Add remaining ingredients to zucchini-onion mixture and mix all together.
    Cook, stirring, for 30 minutes.
    Put in jars and seal.
    Yield:
    9 pints.
