Shrimp Wild Rice Soup - cooking recipe
Ingredients

1/2 c. uncooked wild rice, rinsed
14 1/2 oz. can chicken broth
2 (10 3/4 oz.) cans condensed cream of potato soup
2 c. half and half
1 c. shredded Swiss cheese
1/4 c. sliced green onions
12 oz. pkg. frozen cooked shrimp
2 Tbsp. sliced almonds, toasted
Preparation

In large saucepan, combine wild rice and chicken broth.
Bring to a boil.
Reduce heat; cover and simmer 40 to 50 minutes or until tender.
Stir in potato soup.
Add half and half, cheese and green onions.
Simmer until cheese is melted, stirring frequently. Add shrimp; heat gently until shrimp are thoroughly heated, stirring occasionally; do not boil.
Garnish each serving with almonds.
Yields 6 (1 1/3-cups) servings.
