Broc-A-Noodle-Stew - cooking recipe

Ingredients
    2 onions, sliced thickly
    3 ribs of celery, sliced
    2 carrots, sliced
    1 Tbsp. oil
    3 Tbsp. butter
    large broccoli stalk and florets, chopped
    1/2 head cauliflower, broken into florets
    14 oz. can whole tomatoes, chopped
    1 medium zucchini
    4 oz. egg noodles
    1 tsp. chopped dried parsley
    1 tsp. oregano
    1 tsp. basil
    salt and pepper to taste
    4 c. vegetable broth
Preparation
    Melt butter and oil in large pot.
    Add onions, celery and carrots.
    Saute until soft.
    Add broccoli, cauliflower, tomatoes and juice and vegetable broth.
    Simmer until cauliflower is cooked.
    Add zucchini, cook until barely soft.
    Add noodles, cook 10 more minutes.
    Serve hot topped with Parmesan cheese or sour cream.
    Makes 6 servings.
