St. Joseph'S Cream Puffs - cooking recipe

Ingredients
    1 c. water
    1/2 c. margarine
    1 c. flour
    1/4 tsp. salt
    4 eggs
    1 tsp. grated orange rind
    8 maraschino cherries (for garnish)
    1 c. Ricotta cheese
    2 Tbsp. semi-sweet chocolate morsels, chopped
    1 tsp. grated orange rind
    1/3 c. confectioners sugar
    1/2 c. heavy cream, whipped
    1 tsp. almond extract or vanilla
Preparation
    For Puffs:
    Combine water and margarine in a deep saucepan. Bring to a boil; cook until margarine melts.
    Quickly stir in flour and salt. Beat until dough forms a ball in center of pan. Remove from heat; let stand 5 minutes. Add eggs, one at a time, beating thoroughly after each addition. Beat in orange rind. Mixture will be very stiff. Drop mixture by tablespoon onto a baking sheet, which has been greased.
    Bake at 375\u00b0 for 20 minutes or until puffs are firm and crusty (prick each puff with a fork to release steam).
    Leave in oven an additional 5 minutes. Remove from oven; cool.
