Squash Relish - cooking recipe
Ingredients

12 C chopped squash (about 20 sm/med squash)
4 C onion, chopped (about 4 lge onions)
4 Tbsp plain salt
2 1/2 C apple cider vinegar
5 C sugar
1 tsp dry mustard
1 1/2 Tbsp corn starch
1 tsp turmeric
4 oz jar pimento (can use chopped red bell pepper)
1 pod hot pepper, chopped and seeded
Preparation

Sterilize pint/quart jars and lids. (Recipe makes about 3-4 quart jars.)
