Eggplant Fritters - cooking recipe

Ingredients
    2 eggplant
    1 large onion, chopped
    1/2 bell pepper, chopped
    2 or 3 green onion tops, chopped
    1 Tbsp. chopped parsley
    2 eggs, well beaten
    4 tsp. oleo
    salt and pepper to taste
Preparation
    Boil eggplant until tender; peel and mash well.
    Add all ingredients to eggplant.
    Add enough flour to make a stiff batter. Drop by spoonful in hot oil.
    Brown; drain on paper.
    Serve hot.
