Spanish Eggplant - cooking recipe
Ingredients

1 medium eggplant, cut in small pieces
3 Tbsp. bacon drippings
2 small chopped onions
1 (16 oz.) can stewed tomatoes
1 Tbsp. parsley
1 tsp. sugar
1/8 tsp. pepper
1 tsp. chili powder
1/2 c. Cheddar cheese
1 c. buttered bread crumbs
Preparation

Saute eggplant in bacon drippings.
Place in casserole dish. Saute onions and stir in tomatoes, parsley, sugar, salt, pepper and chili powder.
Heat to boiling.
Pour over eggplant.
Top with cheese and bread crumbs.
Bake at 350\u00b0 for 30 minutes.
