Lemon And Beet Salad - cooking recipe
Ingredients

2 tsp. grated lemon peel
1 (16 oz.) can sliced beets, drained
1/4 c. chopped onion
1 Tbsp. mayonnaise
3/4 tsp. salt
dash of pepper
Preparation

Prepare 3 hours before serving or one day ahead.
In medium bowl, toss 1 teaspoon of grated lemon peel with remaining ingredients until well combined.
Refrigerate at least 2 1/2 hours to blend flavors.
Garnish salad with remaining 1 teaspoon lemon peel before serving.
Makes 4 servings.
