Creamy Broccoli Soup - cooking recipe
Ingredients

2 Tbsp. minced onion
3 Tbsp. butter
3 Tbsp. flour
1 to 2 tsp. salt
3 c. milk
1 to 2 tsp. pepper
3 c. chicken broth or 3 chicken bouillon cubes in 3 c. boiling water
2 c. diced carrots
1 (10 oz.) pkg. frozen chopped broccoli, slightly thawed
Preparation

In a large saucepan, saute onion in butter until tender.
Stir in flour and 1 to 2 teaspoons salt. Gradually add milk, stirring constantly, and bring to a boil. Add broth, broccoli and carrots. Cook over low heat, don't boil, stirring occasionally, 25 minutes or until carrots are done-tender. Add pepper and salt to taste. Yields 2 quarts.
