Chicken Pineapple Skillet - cooking recipe

Ingredients
    1 1/2 lb. boneless chicken breasts
    1 small onoin
    1 c. celery, sliced
    1 green pepper, chopped
    2 c. pineapple chunks and juice
    2 tsp. cornstarch
    1/2 tsp. cinnamon
    1 1/2 tsp. soy sauce
Preparation
    Over high heat saute chicken breasts which have been cut into strips.
    Sprinkle with salt and stir constantly for 3 minutes.
    Add onion, celery and green pepper.
    Continue to cook, stirring constantly for 2 minutes.
    Add pineapple; reserve juice.
    In bowl, mix pineapple juice, cornstarch, cinnamon and soy sauce.
    Stir juice mixture into pan of chicken and bring to a boil.
    Reduce heat and cook just until clear.
    Serve over hot rice.
