Cucumbers In Cream - cooking recipe

Ingredients
    2 large cucumbers, peeled and seeded
    1 tsp. salt
    freshly cracked pepper to taste
    3 Tbsp. wine vinegar
    1 Tbsp. finely chopped fresh parsley
    1/2 c. heavy cream, barely whipped
Preparation
    Slice cucumbers very thin.
    Place in bowl and sprinkle salt over them.
    Refrigerate 15 minutes and then squeeze to drain off the liquid.
    Add remaining ingredients, folding them gently.
