Ingredients

3 or 4 large onions
ice water
1 egg, beaten
1 tsp. salt
1 1/2 tsp. baking powder
2/3 c. water
1 c. flour
1 Tbsp. oil
1 tsp. lemon juice
1/4 tsp. cayenne pepper
salad oil (for frying)
Preparation

Peel onions and slice about 3/8-inch thick.
Separate into rings.
Put in a covered bowl; cover with ice water.
Keep in refrigerator until ready to fry.
Combine egg, salt, baking powder, water, flour, 1 tablespoon oil, lemon juice and pepper; stir until smooth.
Heat oil to 375\u00b0.
Remove onions from water and dip into batter.
Fry until golden brown.
Drain on paper towels.
